Tasting Notes

Vinous Stephen Tanzer - 01 Nov 04
Captivating yeast autolysis aromas of baked bread, cashew, Brazil nut and baking spices. Concentrated, dry, rich and toasty, with a sweet nutty flavor contributing to the wine's seductive creaminess. Impressively rich, ripe, harmonious Champagne with a solid backbone of acidity. Finishes long, broad and nutty. This reminded me of this producer's superb 1990 bottling. (Martine's Wines, Novato CA

Champagne

Champagne, exclusively from France's Champagne region, is synonymous with luxury and celebration. Made primarily from Chardonnay, Pinot Noir, and Pinot Meunier, it undergoes secondary fermentation in the bottle, creating its signature bubbles. Flavours range from crisp green apple and citrus to rich, toasty notes of nuts and honey. Yeast contact in the bottle contributes to pastry and brioche notes, which are a key part of good quality Champagne. Top producers include Moët & Chandon, Veuve Clicquot, and Krug.
